Edible Bird's Nest History



 

Primarily known as Swallow Nest, bird’s nest has been consumed by the Chinese people since more than 1500 years ago, firstly discovered during the Tang Dinasty (A.D. 618-907) in China. In the earliest records, it was said that the swallow nests were actually traded for porcelain during that time, and Admiral Cheng Ho returned from South East Asia, bringing back the swallow nest to the Chinese Emperor.

As bird’s nest natural formation is different one to each other, the size of the bird’s nest also varies from small to large, which larger bird’s nest is more expensive because it is rare in nature. Natural Remedies to Lighten the Skin Tone

Read the label

The first easiest thing to find out whether the product is safe or not is through the product label. Two things to notice on the product label are basic information and composition. Generally, in every country, its official regulation would require clear product labelling, such as the registered brand, registration number, registered company and address, the composition, expiry date, and instruction on how to use the product.

Reading the composition is also important to find out any suspicious or dangerous components such as mercury, which can be obfuscated with another Latin or scientific name. On the other side, the products are safe if they contain vitamin E, Olive Oil, Allantoin, vitamin B3, Arbutin, etc.

Try the sample

Good products will usually provide the tester to try before buying. Celebration of Dragon Boat Festival



 

Known as Duanwu Festival in China, Dragon Boat Festival falls on the fifth day of the fifth month in Chinese lunar calender. This year, dragon boat festival occurs on June 9, 2016.

The Celebration History

Aside from many versions of legends about how Dragon Boat Festival starts, Qu Yuan happens to be the most popular legend. Qu Yuan was a loyal minister accused of false conspiracy and exiled during the Warring States Period of ancient China. After his beloved state fell to the State of Qin, he drowned himself by attaching a heavy stone to his chest and jumping into the Miluo River. People who admired him tried to search for him by racing out in their boats. When his body could not be found, they dropped balls of sticky rice into the river so the fish would eat them instead of Qu Yuan's body. This is said to be the origin of Dragon Boat Festival.

What People Celebrate

Chinese dragon, symbolising the sun, represents the masculine energy; while the moon represents feminine energy. Therefore, winter is considered annual peak of feminine energy, while summer is considered annual peak of male energy, whose the image is associated with Duanwu.

The dragon boat is also designed and decorated with the front end shaped like open-mouthed dragons, and the back end with a scaly tails. A sacred ceremony is perfomed to “bring the boat to life” by painting the eyes, before any competitions start. At the race, first team who can grab the flag at the end of the course will win.

What People Do

During the celebration, many people eat sticky rice dumplings (sticky rice treats wrapped in bamboo leaves) and drink realgar wine while race dragon boats. There are also people taking long walks, writing spells, wearing perfumed medicine bags, and other health-related customs. All of these activities are considered effective to prevent evil and diseases.

Bird’s Nest Recipe with Vegetables

I. Bird's Nest Soup with Vegetables

Ingredients :

- 115 g superior bird’s nest, soaked until soft

- 2 dried black mushrooms

- A suitable amount of vegetables, such as black mushroom, spinach, cauliflower, bok choy, etc

- A suitable amount of egg yolk shreds

- A suitable amount of ham shreds

- 3 cups stock

Instructions :

1. Soak mushroom or vegetables till tender, then wash and cut into shreds.

2. Arrange vegetables, ham shreds, and egg shreds on top of the bird’s nest.

3. Pour in stock, stew over the boiling water for 40 minues

4. Serve hot.

 

II. Bird’s Nest Soup with Winter Melon and Mushroom

Ingredients :

- 113 g superior bird’s nest, soaked until soft

- 450 g winter melon

- A suitable amount of mushroom

- 38 crab meat

- 2 cups stock

- 1 egg white

- 1 slice ginger 

Instructions :

1. Remove pell from winter melon, remove pith and cut into pieces.

2. Soak mushroom till tender, then wash and cut into shreds.

3. Boil the stock, add slice ginger, mushroom, and winter melon.

4. Cook for 10 minutes, then cover for 10 more minutes.

5. Discard slice ginger, blend winter melon into puree.

6. Add bird's nest into winter melon puree and bring to the boil. Stir in crab meat.

7. Season with salt and corn strach.

8. Add white egg, then serve hot.

 

Pumpkin Scallop Bird's Nest Porridge

Ingredients :

- 5 g superior bird’s nest, soaked until soft, and stewed

- 5 medium to large size hokkaido dried scallops, soaked and peeled into shreds

- 200 g pumpkin, washed and chopped into small cubes

- Half cup white rice, washed and drained

- 1 litre of water

Instructions :

1. Put water, rice, pumpkin, and the dried scallops in a pot and bring to boil. No need to add salt as hokkaido scallops are already rich in flavors.

2. Cook for another 30 minutes with low heat, until the soft porridge is cooked. Stir occassionally.

3. Add softened bird’s nest and cook for 5 minutes until the bird’s nest turn soft and into gelatin.

4. Cook using electric cooker will be fine.

One of the bird’s nest simple recipe to cook is Classic Bird’s Nest Soup with Rock Sugar as follows:

Ingredients:

- 10 gram dried bird’s nest

- 100 gram rock sugar

- 100-300 ml water

 How to cook:

1. Soak bird’s nest in clear water for at least 4 hours, and change the water to soak it again for another 2 hours. Observe that the bird’s nest become soft and expand from its original shape.

2. Dispose water used to soak the bird’s nest with filter.

3. Cook in hot pot with water and add rock sugar. Stir for 10-15 minutes until the bird’s nest is soft.

Healthy Snack to Boost Mood during Pregnancy



 

Pregnancy makes you hungry most of the time? It’s not about your appetite, but your body’s needs. According to Baby Center, the challenge is to get a limited number of "extra" calories per day, but they need to be nutrition-dense. Eating healthy during pregnancy is important to provide you and your baby with what you truly need at every stage of your pregnancy.

1st Semester

In this first semester, you will need more folate which you can get from spinach, asparagus, oranges, honeydew melon. You would also need vitamin A for your baby's organs, circulatory, nervous system and respiratory. Eggs and cheese are good sources for vitamin A, including slices of ripe mangoes, peaches, papaya; make this into a delicious smoothies to pack to work for snack.

2nd Semester

This semester, you would need more calcium, magnesium, and vitamin D for your baby's teeth and bones. Some food sources are dairy foods e.g. low-fat milk, plain yoghurt, milk-based drink, soya yoghurts, dried figs and almonds. Pack a snack of sardines on toasts, a baked potato, a handful sunflower or pumpkin seeds to boost your mood througout the day.

3rd Semester

In this last semester, you would need vitamin C to keep your immune system and help placenta to develop properly, vitamin B (extra thiamine) to release energy from foods, fibre and water to ease constipation. Some boosting snacks include wholemeal toast with tomato, mushroom soup, tomato and strawberries salad, kiwi smoothies, good-quality grilled sausage or slice of ham, brown rice and green vegetables, a lot of fresh fruits.

Ingredients:

- 80 gram of premium bird’s nest, soaked until soft

- 2 tbsp of unflavored gelatin

- 175 mL of sugar

- 250 mL of hot water

- 750 mL of pureed fresh mangoes

- 250 mL of 2 percent evaporated milk

- 8 ice cubes

- Lime wedges (optional)

- Fresh mango slices for garnish (optional)

Instructions:

1. Put the hot water into a bowl, mix with gelatin and sugar.

2. On another bowl, mix mango puree with evaporated milk and ice cubes.

3. Pour gelatin mixture into mango mixture and stir until ice cubes are melted.

4. Pour the mixture in the jelly mould with the soaked bird’s nest, chill for at least 3 hours.

5. To serve, dip jelly mould briefly in hot water then turn pudding out onto platter. Squeeze on some lime juice, garnish with mango slices if desired and serve.Back to top

Cap Go Meh Festival



 

Cap Go Meh comes from the Tiociu or Hokkien dialect, which “Cap Go” means “fifteenth”, and “Meh” means night. So it is literally means the “fifteenth night” of Chinese New Year, when the full moon is always up in the sky. It also officially closes the Chinese New Year celebration for the whole two weeks.

Cap Go Meh is celebrated a bit different from Chinese New Year, which is usually celebrated with family with reunion dinner. Cap Go Meh is more about public celebration, either centered at the temple or parade on the street with lion dances (barongsai) and dragon dances (liong).

The History of Cap Go Meh

There are still many records on how this festival started. But it’s believed to date back to the Han Dynasty (206 BC to 221 AD) when a homesick palace maid, named Yuan Xiao, was trying to contrive a distraction to enable her to go home. She told the emperor that the Fire God would set fire to the city unless it was appeased with a scene of burning. Then the emperor ordered the firecrackers be set off, and hung bright red lanterns throughout the streets.

Cap Go Meh Across the World

This festival is not only celebrated in China, but in all over the world with different culture. In Penang, Malaysia, single ladies will gather together and throw oranges into the sea. In Indonesia, generally, people are watching dragon and lion dances when eating special dishes for Cap Go Meh. In Singkawang, Indonesia, people still go to the temple to ask blessings. In Semarang, Indonesia, some kids are going around town with Chinese outfits; this has known as “Ceng Gee”.

Cap Go Meh Special Food

Named after the maid “Yuan Xiao”, one Cap Go Meh special food is round symbolizing the first full moon of the year, made of rice flour and stuffed with all manner of delicacies, both sweet and savory. The “Yuan Xiao” is usually served with brown sugar soup, or can also be combined with Classic Bird’s Nest Soup with Rock Sugar.

Instruction:

Cook soaked bird’s nest with water and rock sugar. Stir for 10 minutes until the bird’s nest is soft. Add “Yuan Xiao”, and cook for another 5 minutes. Let it cool down. Can be served hot or cold.

While in Indonesia, originally from Java, a more popular Cap Go Meh dish is “Lontong Cap Go Meh”, served with opor ayam (chicken with coconut milk), sayur lodeh (vegetable soup), spicy liver, telur pindang (seasoned spicy boiled egg), some vegetables, pickles, chili paste, and prawn cracker. CNY Recipes Made from Bird's Nest



 

Chinese New Year is not only about red envelope. It is more likely about spending time and gathering with family, which reunion dinner is one of the most important events in CNY tradition. After reading about Why Bird's Nest Turns to Be the Best Gift for CNY, it would be also a great idea to serve bird’s nest as CNY dishes for reunion dinner. Here are some CNY recipes made from bird’s nest.

Stewed Bird’s Nest with Abalone and Chicken

Ingredients:

- 113 g superior bird’s nest, soaked until soft and stewed
- 113 g abalone
- 1 spring chicken
- 113 g lean pork
- 6 cups stock
- 13 g ham, sliced
- 2 slices of ginger
- Salt

Instructions:

1. Cook abalone for 10 minutes in boiling water. Turn off the stove and cover it for 30 minutes.
2. Take out the abalone, wash and rub with warm water.
3. Cook ginger and spring onion in boiling water for a while. Add shaoxing wine and abalone, cook for 5 minutes. Take out the abalone
4. Put abalone with hot stock in a stewing pot, and stew over the low heat for 1 hour.
5. Wash the chicken and lean pork together. Parboil and rinse.
6. Transfer to the stewing pot where abalone and stocks inside. Add ham and ginger, then stew for 3 hours till abalone is soft.
7. Add bird’s nest and stew for 10 minutes.
8. Taste it before adding salt, if needed.

 

Bird’s Nest in Winter Melon

Ingredients:

- 150 g superior bird’s nest, soaked until soft and stewed
- 3 kg winter melon
- 75 g dried lotus seeds
- 113 g chicken
- 113 g crab meat
- 38 g ham
- 4 cups of stock
- Salt

Marinate:

- ¼ tsp salt
- ½ tsp caltrop starch
- 1 tbsp water

Instructions:

1. Wash the surface of winter melon.
2. Scoop out the seeds, pith with metal spoon, and parboil in boiling water. Take out, rinse, and drain them.
3. Wash dried lotus seeds, soak it until soft.
4. Slice half of the ham, shred the rest.
5. Dice chicken, marinate it and parboil.

Recipe Ideas for Christmas



 

Christmas is the best time of the year followed by Boxing Day! Celebrate it with your loved ones, family and friends. These are some recipe ideas for Christmas to bring you joy from preparing the main course to the sweet treat!

Roast Turkey

Recipe from Jamie Oliver

Ingredients:

- 6.5-8 kg higher-welfare turkey

- Flavoured butter

- 2-4 clementines

- a few sprigs of fresh herbs

- 1 sprig of fresh rosemary

- 2-3 carrots

- 3 onions, peeled

- 2 sticks celery

Instructions:

1. Pat the turkey dry with paper towels. Place the wings underneath the body. Place the butter, clementines, and fresh herbs in the cavity. Take the fresh rosemary, pull off the leaves at the bottom then spear that through the loose skin around the cavity to hold it together and keep it from shrinking back as the turkey cooks. Place the carrots, celery, and onions in a metal roasting pan. Transfer the turkey to a wire rack and place it on top of the vegetables.

2. In a small bowl, combine the parsley with the garlic, sage, 1 tablespoon fresh lemon juice, 1 teaspoon grated lemon zest, and 1 tablespoon olive oil. Carefully slide your fingers under the skin of the turkey breast and thighs to loosen it. Stuff the herb mixture under the skin. Drizzle the skin with the remaining 6 tablespoons oil and, using your fingers, spread it on evenly. Season with 1 1/2 teaspoons salt and 1/2 teaspoon pepper.

3. Put it in the roasting tray, cover with foil, and put into the preheat oven then turn the heat down to 180ºC/350ºF for 4 hours. After 3.5 hours, remove the foil to get the skin golden and crispy. It's ready to come out at 65ºC-82ºC. Let the turkey rest for at least 30 minutes before carving. Reserve the pan drippings and vegetables for the gravy.

Pound Cake With Oranges & Bird’s Nest

Ingredients:

- 4 oranges

- 2 tablespoons honey

- 10-12 ounce pound cake, sliced

- 1/2 teaspoon chopped fresh rosemary

- 2 tablespoon cooked bird's nest, chopped

Instructions:

1. Cut away the peel and pith of the oranges and cut out the segments. In a medium bowl, gently combine them with the honey.

2. Spoon the oranges over the cake and sprinkle with the rosemary and bird's nest before serving.

3. Rinse the dried longan and goji berry in clean water as well.

4. Place the bird’s nest, goji berry, and dried longan with 200 ml of hot water and simmer in low heat for 40-60 minutes

5. Add rock sugar and stir for 10-15 minutes until the bird’s nest is soft. Simmer for another 20-30 minutes.
